The Chicken:


  • 4 lb whole chicken with skin
  • 4-inch ginger, cut in sheets 
  • 10 Garlic cloves 
  • 1 Tablespoon salt 
  • 1 Scallion, cut 
  • Enough water to cover the chicken 
  • Ice cubes and cold water 

How to prepare it:

  1. Boil water in a pot. Place the chicken inside together with the salt, ginger, garlic, and spring onion. Let it boil gently and cover the pot with the lid. 
  2. Cook for 30 minutes or until the internal temperature of the chicken is 167°F. Then carefully remove the chicken and place it in a pot with water and ice. 
  3. Leave in the ice water for 15 minutes, then discard the water and cover the chicken so that the skin does not dry out. Reserve the chicken broth for later.

The Rice


  • 2 Tablespoons of butter 
  • 4 Garlic cloves, grated 
  • 2-inch ginger, grated 
  • 2 Cup of rice
  • 3 cup chicken broth that we have prepared 
  • ½ tsp salt, or to your preference 
  • 1 Tablespoon oyster sauce 

How to prepare it:

  1. In a low saucepan, heat the butter over medium heat, and then add the grated garlic and ginger. Fry it until golden brown. Then add the rice (previously washed) and continue cooking for another 2 minutes, stirring gently.
  2. Add the chicken broth, salt, and oyster sauce. Mix gently and bring to a boil. Cover the pan with the lid, reduce the heat to low, and cook for 15 minutes.

Soy Sauce 


  • ¼ cup of soy sauce
  • 1 Tablespoon oyster sauce 
  • 2 Tablespoons of chicken broth that we have prepared 
  • 1 tsp sugar 
  • ½ tsp sesame oil 
  • Ginger and Garlic Sauce 
  • 10 Garlic cloves, grated 
  • 3 Ginger thumbs, grated 
  • 3 tbsp vegetable oil 
  • ½ tsp salt, or to taste 
  • 1 tsp vinegar 
  • 1 tsp sesame oil 
  • 1 Tablespoon chopped chives 

How to prepare it:   

  1. Add all the ingredients to a bowl and mix. The sauce is ready.

Ginger and Garlic Sauce 

  1. Heat the oil in a frying pan over medium-high heat. Then add the ginger and chopped garlic. Cook for 2 minutes and turn off the fire. Add the rest of the ingredients and mix. 

Assembly of the Rooster and Rice
